Elliott Farms was founded in 1908, a time when land developers and the railroad were encouraging migration to the San Luis Valley. Today, second generation Thad Elliott, along with his daughter, Emily and her husband, Kyler, grow potatoes. The land has seen a long progression of planting, irrigating, harvesting and storage in adobe cellars.
Why Idaho Potatoes
